樂家杏仁糖 Almond Roca

材料:
外層:
調溫朱古力 300g
杏仁角 約100g
內層:
Butter Crunch Toffee
牛油 75g
糖 125g
粟膠1湯匙
水 1湯匙
做法:
1) 內層所有材料放入煲內, 用中火煮溶
2) 一路用中火煮約10分鐘,約接近7或8分鐘時, 糖漿會由半透明白色轉至淡黃色, 其間輕輕攪拌幾下, 用溫度計量一下, 糖溫到150度即熄火, 此時糖漿顏色會是淺啡色
3) 將糖漿倒入模內, 待稍降溫後, 立即切件
4) 將一條杏仁糖放入已調溫朱古力內, 沾上朱古力後, 放在烤至微香的杏仁角上滾幾下, 待稍為凝固後取出, 放在糖紙上至完全凝固即成!
